FWIW, I've never been satisfied with any of the McCormick extracts I've tried, although I've only tried three or four. There's a company called Watkins that I know makes a coconut extract WatkinsOnline | Coconut Extract, although I've not tried it myself. However, I've used a couple-three of their products and found them to be more than acceptable. You might also check with Penzys and - Oh dear, I forgot their name - Spicehouse? - based in Chicago I believe (I posted a message asking about them and there was some positive feed back both here and from some people I know personally). shel |

| i just bought some coconut extract, adams brand, which i've never heard of, to use in a sweet potato souffle for thanksgiving along with orange and vanilla extracts and it seemed to be just fine..it seems to me you use such a small amount of it, that all the running around to different stores just isn't worth it. i got it at my local store, but check out walmart, unless you have a food purveyor, of course, who will deliver it right to your door! joey |

| I have the Adam's brand in my pantry. I got it from Walmart. It is less expensive at Walmart. I don't use much of it. I used it for a coconut cake recipe.

| Kingarthurflour.com has coconut flavoring. This would probably work. A word of caution...some of their flavorings contain ethylene glycol, which imparts a nasty chemical taste. I would avoid the coconut if it contains this. |
