Default How to convert this cheesecake recipe?

Hi Everyone,

Junior's Famous Cheesecake Recipe | Recipezaar

This is my absolute favorite cheesecake recipe. I want to make it for thanksgiving this year but I’m not quite sure how to convert it to be a pumpkin cheese cake. I looked to see if there was a recipe on this site for the pumpkin cheese cake but I couldn’t find it. The big day is almost here so if anybody has any suggestions please feel free to let me know.

Thanks,
Kelley

what i would do is... add some pumpkin pie spices to the sugar (in the cream cheese mixture) . for every cup of pumpkin puree, add one egg. you should only need about a cup maybe 2 for this recipe. so after you add the first cup of pumpkin, taste the batter. do you need more spices? more pumpkin? and adjust from there.

When I did my Baking and Pastry Certification at Peter ( now New York Restaurant School I think) we were taught to make ANY flavor cheesecake by swirling..

We took a cup of cheesecake batter out, added whatever flavoring compound, puree or extract to the reserved cup of batter and then add one egg. Then we swirled this cup of batter throughout the cheesecake.

I've worked out about 17 varieties of cheesecake by mixing and matching along with the crusts.

Default pumpkin cheesecake

I have posted a recipe for pumpkin cheesecake under the pumpkin thread earlier. Check it out since there may be other recipes as well.
