| Here's another recipe I know everyone will enjoy. I used to make this all the time for my family when I still lived with my mom and everyone enjoyed it. The recipe is as follows: 1/2 cup strong, hot coffee 1/3 cup cocoa 1/2 cup butter or margarine 1 cup brown sugar 1 cup granulated sugar 3 egg yolks 1 teaspoon baking soda 1/2 cup sour cream 2 cups all-purpose flour 3 egg whites, beaten stiffly 2 batches Cream Cheese Frosting (recipe follows after cake recipe) Gradually add coffee to cocoa, stirring constantly; let stand until cool. Cream butter and sugar until light and fluffy. Add egg yolks; beat until batter is thick. Add coffee and cocoa mixture. Dissolve soda in cream. Add alternately to sugar mixture with flour; beat well after each addition. Fold in egg whites. Pour batter into 2 well-greased and floured 9 inch cake pans. Bake at 350 degrees in oven for 35 to 40 minutes or until done. Remove from pans; cool. ******** Cream Cheese Frosting 3 ounces cream cheese, softened 2 tablespoons butter, melted 1/2 tablespoons vanilla extract 1/4 tablespoons almond extract 1 3/4 cups confectioner's sugar Beat cream cheese, butter, vanilla extract, and almond extract until smooth. Gradually add sugar; beat until smooth and fluffy. Yields 1 cup. Enjoy! ![]()

| This sounds great. I was just thinking today, during an extremely thrilling class where we were discussing ethnopoetics and structuralism (yawn) about how interesting a Mexican mocha fudge cake would be. I have no idea what the recipe would be, other than to include Mexican chocolate and maybe extra cinnamon. Yum. Hmm... I don't know why I said this in a reply, since it has almost nothing to do with what you said... wait... I used the word mocha too!!! Shimmer

| That sounds wonderful. Reminds me of a Mocha Velvet Cake my aunt used to make, a very dense, tender pound cake with a velvety crumb. Anyone have a recipe for that wonderful cake? She made it in a loaf pan.
