| Cake Ingredients: 5 eggs 1 1/4 cup sugar 1/2 cup potato starch 3/4 cup flour 3 tsp. baking powder 3 Tbsp. cold water Syrup Ingredients: 2 cups water 3 Tbsp. sugar 1 tsp. vanilla extract 1 tsp. lemon juice Frosting Ingredients: Whipped Cream Any Flavor Jam Directions: 1)Preheat oven to 350 degrees 2)Grease and flour a 10" tall round cake pan and set aside 3)In mixing bowl, whip the eggs and sugar until stiff. The eggs and sugar must be as stiff as possible. 4)Add the cold water to the egg mixture and whip on high for a few seconds. While the water is being mixed in, sift the flour, baking powder and potato starch together. 5)When the dry mixture is sifted, add to the egg mixture and mix on high for a few seconds. 6)Pour the cake mix into the prepared cake pan and put the cake pan onto a cookie sheet. 7)Place the cookie sheet on the lowest rack in the oven and bake for 55 minutes. DO NOT OPEN THE OVEN FOR THE FIRST 20 MINUTES. 8)When cake is done baking, allow to cool completely before removing from the pan. 9)When the cake has cooled, cut the cake horizontally into 2 or 3 layers. 10)Drench each layer with the syrup. 11)Put the frosting in between each layer and restack the cake. 12)Cover the top and sides of the cake with whipped cream and serve. Syrup Directions: 1)Boil 2 cups of water 2)Add 3 tablespoons of sugar 3)Add 1 teaspoon of lemon juice 4)Stir on high until sugar is dissolved then set aside and allow to cool. Frosting Directions: 1)Mix about 2 cups of whipped cream with about 1/2 cup jam or to taste. 2)Spread frosting in between each layer of the cake. 3)With another 2 cups of whipped cream (no jam added), frost the top and sides of the cake.
