Default Vegan cupcakes

I just bought a book of vegan cupcake recipes. Has anyone here heard of it or tried any of the recipes? If so, how are they?

It may be helpful if you mentioned the title of the book. However, if it is the one I think it is, then yes! I've tried many of them and they have all come out good. My faves are the margarita cupcakes , chocolate with peanut butter mousse, and the cashew cardamom.

I'm curious. Is it the egg and or butter that violate vegan rules?

Hi Kyle
Both eggs and butter violate vegan rules.
Many vegans use an egg substitute in their baking that can work pretty well.

What are you baking today?

Me? gotta deal with some bags of Amish Friendship dough-muffins I guess.

After a long hiatus, I'm slowly getting back into the bread thing. Lately I'm playing with a 25% whole wheat bread. Tweaking hydration, contemplating using a preferment and upping the whole wheat %....

What is the name of the book? I'd be interested in the margarita and cashew/cardamom cupcake recipes if you'd care to share them.

Also for vegan recipes, check out old "cake pan cake" recipes. King Arthur Flour has a number of them. They're sort of poor man cakes with no egg, butter, or milk. We make an orange one and a chocolate one almost daily in the cafe. They're both very moist and delish.

It's called Vegan Cupcakes Take Over The World. It's a really cool book and most often you can't tell the cupcakes are vegan. Honest!
