i need the name and method of a dessert that uses choux paste, sweet paste and cream patissarie. write soon

Gateau St. Honore. I'm going by sketchy memory but it's basically the round of pastry on bottom, choux puffs lining the outside stuck with caramelized sugar and filled with the pastry cream. Oh lord... my mind's screwed up right now. Sorry, fill the puffs with pastry cream and make a chibouste to fill the centre.

St Honore has Puff Pastry, Profiterals of choux paste, pastry cream and chiboust with caramelized sugar.

There are variations too.

Also, Paris Brest ~ like a mini honore.
