Default baking with peach

is peach season in my place now, i never eaten peaches much before i came here to shanghai since in my country peach is very expensive and rare fruit. but now we have many in here ( cause it's in season ) , and a lot of my friend send me boxes of peach ( white ) , so i have many and don't know what to do with it.

i'm hoping you can help me with some ideas and recipes on what to do with the peaches( cooking or baking ). i'm hoping that i can make something that i also can give back to my friend as a thanks for the peaches.

thxs,

hime

Peel and dry sugar freeze, they come out pretty good., and for pies and cakes and sauce are great.

peach cobblers in the south..but I have not yet to find a recipe with a good thick crust on top. I am in the south so we love cobblers. I like the crust from colters bbq but the cobbler itself is too sweet. anyone have any good cobbler recipe? I have tried paula deen peach cobbler but the crust is more of a biscuit type. I guess you can use a pie crust on top? I am looking for a undercook in the middle and crunchy on outside texture crust

Not a baking recipe but slice up a peach and put a couple of pieces in a glass of dry white wine (Pinot Gregio). Very tasty and refreshing.

I made a peach pie this year with a standard shortening crust (lattice top) and it was the most amzing fruit pie I ever had! What made it so special? I did 4 cups of sliced ripe peaches and 2 cups of blueberries. The combo was phenomenal!
