No Smile Chocoate Popcorn-using UNsweetened chocolate, ideas?

Hello!

Thanks for reading! hope you can help me.... First...Background:

I can cook spag. (ok, boil water, reasonably often..)
I can mix pizza dough (and bread dough) now... without a bread machine ! (woot)
I can Prep pizza, and even GRILL that pizza (amazing btw)
i can now grill a hamburger and it not be burnt/raw....(that took awhile)

heres the difficulty... I MUST use unsweetened chocolate (or other NON milk based chocolate...)

Chocolate-Caramel Popcorn from this recipe: crud, not allowed to post links yet...

its on the brands kraftfoods site, search for BakersChocolates and find the exact chocolate i am using...
I happen to find it at the grocery store , very excited....!!


sounds great... (but i want it without the caramel....and using the unsweetened chocolate...

what do i have to add to the chocolate to make it...edible...

(from the same site, i am trying the REGAL chocolate Sauce right now....(sitting in front of me, in a bowl (too small btw, big bowl MEANS big bowl...lol)

I work from HOME, and now my wife is away 8 days a week, with her work/school and internship for work. So i am often in charge of food........ (and only knowing 3 things to eat is getting old... hehe)

Anyhow, hoping to surprise the 6 yr old with a treat... (ok ok, i am the popcorn deviant... i bought a popcorn Machine (4oz) to use...almost daily.... (saves money...no chips/pretzel purchases!!)

well you can get non dairy chocolate that isn't unsweetened (unsweeted chocolate is some strong juju, you usually need to cut it with some sugar and/or cream). Lower quality chocolates have part of their cocoa butter removed and replaced with milkfat or something dairy. But if you look for high quality chocolate, semi sweet or darker, in bar form you should be able to find non dairy chocolate. When in doubt look on the ingredients. Should pretty much be cocoa or chocolate, cocoa butter, sugar, and mabye an emulsifier. So basically buy a bar of ghirardelli or lindt, semi sweet chocolate. To make the popcorn I would suggest chopping up the chocolate and melting it with a little bit of canola oil (this will help keep the chocolate from setting up completely) in the microwave, in 10 second bursts, stirring often. Then pour it over the popped popcorn. Hope this helps!
