Default where to buy chocolate flavouring?

Two years ago I was taught by a pastry chef how to make delicious chocolate truffles. I am now expected to make them every Christmas season. However, he taught me using only Brandy to flavour and made it very clear not to flavour with something if it contains water. Since I am not a professional pastry chef, what other products would work for flavouring and where would I buy them? I love the combination of mint and chocolate or raspberry and chocolate, but it seems alcohols that have these flavours also have water added to them. Any advice would be appreciated. I'm in Ontario if that helps with directing your suggestions. Thanks a lot!

Whenever I make truffles, I rarely use alcohols. I occasionally use Kahlua, but that's really it. I usually use LorAnn oils (sold in many cake supply stores and even in Michaels, Hobby Lobby, etc.). They can also be found on their website, here:

https://www.lorannoils.com/c-2-lorann-gourmet.aspx

Caution: When using these, a little goes a long way. This isn't like a vanilla extract. Usually for a large batch of handpainted chocolates or truffles I only use a couple of drops. They come in a HUGE variety of flavors and mix and match very well.

Happy baking .
