Default baking with soy / whey protein powder

I have recently discovered baking with soy protein powder and whey protein powder and made wonderful cookies.

Some of my experiments with whey protein powder almost produced a croissant !

As a low-carb eater I would love to get some help for creating cookies and mock croissants.

Thank you very much for the links you gave me. The second one is very interesting as the recipes don't call for flour.

Regarding the flourless croissant I need to experiment more.
