something totaly different i learned in culinary school, but since i havent worked anywere that does fries i havent done it in a long time other than for me and my staff(in small batches), this is a kinda tedious process but pretty good...

dont touch my knife, towel, tongs or my tickets, and stay in your area dammit. more on that, tiny tiny kitchen i run the oven the fryer and saute, i also expo, the other line guy runs the grill and some saute, and boy do i get heated...
ive worked through out new england , vermont i made under 10/hr but i was just a student , in mass , numerous kitchens is still under 10/hr, same in rhode island, in conn at the casionos everyone starts at 8.10 an hour dont ask about...
i have not had health insurance since college and i got to tell you.... IT SUCKS!!! a lot, for instance i cut myself this past winter, wasnt at work either that cost me $1,000 at ER and i was very ill for 3 weeks that was a few hundred...
what "restaurant school" has a $200 application fee? mine was free, actually i remember applying to 2 schools back then and they were both free.
your not insane, well maybe you are but that is beside the point, moving on, look at it from every possible angle you can think of i have already thought of about 12 just from what you wrote in your post, what kind of fruit you wanna use...

mexico is very close for one thing (as is new mexico, arizona and texas all with the same problem) second they will work for very cheep do whatever they are told, third they will work for cash, fourth... **** i can go on for hours, learn...
