Are you using a pizza stone? If not, give it a try. It makes a big difference. Home ovens don't get as hot as restaurant ovens so the pizza stone helps. At what temp are you baking your pizzas?

CompassRose, I'm pretty sure you can as I've had frozen desserts with the stuff. Freeze them in small packages. By the way, where did you get sweetened chestnut puree? Any online source? Can't find any around here.
