I love that only one person listed Adria. Innovative, yes. World's best Chef, maybe not. Give me someone who can take all the nasty bits as Bourdain calls them and turn them into something truly sublime, and I'll show you the world's best Chef. 1. I love Bourdain because of and not in spite of his attitude, and his true love of local, traditional peasant food made with a five generation old recipe, and possible cooking vessel. I also love his celebration of what food is...
Las Vegas Las Vegas Las vegas. There is no other city in the world that can offer you such a diverse culinary environment. Regardless of whether you want to learn traditional Salvadoran food in a hole in the wall joint or cook for banquets of 15,000, everything in the culinary world is represented here in Vegas. Jobs abound, year round sun, beautiful scenery, beautiful people, tons of activities. It is one of the only places I know of where you can learn Italian,...
I never thought I would say this, but I finally broke down and bought a pair of Crocs the other day. The Bistro model, totally enclosed with a non skid sole. I want to tell you that my plantar fasciitis gave me no pain the day after I bought them. For the first time in two years I woke up with no foot pain at all. They are amazing. And cheap. $39.95 anywhere you buy them. They have great support, are cushy and soft and have the massaging beads on the sole. As long...
Get another good job offer and bring it to him. At that point you will find out what kind of person he is. If he shows you the door, you know that he will do the same thing to the next person and there was no negotiating to be done in the first place. If he is a reasonable person, he will sit down and work out a fair situation with you. Either way, you have lost nothing. Don't be a doormat.
Do it long enough and you will learn to relish slogging through the weeds. Us lifers live for those nights when you have a really hard push, no break and then a second or third turn. It gets the adrenaline flowing and makes you feel young again. I have always said that cooking is the easiest part of my job, and the time when I am most relaxed. I still love to jump on line and take the kids to school as often as I can. Thankfully they are still amazed at what the old...
Ah, how I miss Bell's beer. Oberon was a thing of beauty. Haven't had it in years. Ann Arbor is great. I used to live at Division and Liberty, just a few blocks from where you are. Learned how to sling some serious fish at The Real Seafood Company. Also a Mainstreet Ventures restaurant. That was a long time ago.
I would do a contract for everything you do. When everyone is on the same page and in agreement about what is to be delivered, it eliminates a lot of problems down the road. Also, God forbid you have an issue that requires litigation, if it was not documented, it never happened. As far as what to charge, you need to figure out your cost just like you were in a restaurant. You have to cover you food cost and your labor cost. When you know what the cost of your food...
Nice restaurant. I have been there a time or two. I worked at the Real Seafood Co. for a while there in Ann Arbor. Cool town. Go Wolverines.
Unfortunately, this is what you signed up for. What it boils down to is how much do you like your job. In the larger hotels and casinos, we have to deal with food & beverage directors telling us what to serve all the time. We may not agree, but if we push too far, they will just find someone who will do the job as they see fit. It sucks, but until you are the owner again, you may just have to deal with it.
I have six kids, and people always ask me how I got them to eat so well. I simply tell them that it is all in the approach. Most people start out by saying, you might not like this, or, if you don't like it you can spit it out. I start out by telling them that they are going to absolutely love it, and try to find something they like to compare it to. Consequently, my kids will eat everything from sushi to raw oysters, braunschweiger to calamari...and ask for seconds. ...
