Tonight I am making a hand carved Entrecote burger with caramelized onions, aioli, and home made yellow pepper tabasco. I will serve it in home baked buns!
Dominica (not the Dominican republic) is a tiny island between Martinique and Guadelupe -they make nice coffee there (not the best, but I guess 99% of the people you know have no idea where Dominica is....so it is pretty exotic)
i would go with something with intense tastes, a Saint Estephe, Pauillac or St-Julien
