OP, those sounds really good! i'm going to have to try them too. the last chocolate truffles i made i was NOT happy with. they looked pretty awesome, but the centers were not smooth and a bit chunky. i'll have to give these a try soon.

wow, thanks for so many replies :) i've grown up with using nothing but dull knives, and the last few years i've taken over my mom's knives and convinced her to start keeping them sharp, so i know how important it is. it's so weird...

thanks for the replies, guys..... my knives are the newer chicago cutlery knives, not the old ones. however, I'm happy with them for now, so I'll keep them in good shape and stick with these for the time being. thanks again.
ive made lasagne numerous times, and ive only used ricotta once or maybe twice. i just use regular mozzarella, or some other shredded cheese.
spaghetti with a little Parmesan. best food ever.
last time i made pb cookies, i added cocoa, just to experiment. i hated the way they turned out, it was all wrong. this sounds good though, i may try it myself. oh and i agree...the only thing better than a pb cookie, is a filled pb...
