The best pumpkin pie I have made is from Julia Childs The Way to Cook. Its light, can stand on its own or with whipped cream. Every time I have made it people raved.
I have a flat top halogen cooktop - easy to clean, fast to heat up, slow to cool - if you have the option of gas go for it. Natural gas is not available in my area and the halogen is the hottest of the electric options.
Most community colleges offer a cooking program - George Brown College in Toronto is exceptionally good. the previous head of it (he is now deceased) lead the Canadian culinary Olympics team a few times.:( :)
You might try serving the Yorkshire Pudding as a popover rather than in the traditional pan - overcook them a bit so they are almost crisp and serve them with lots of gravy. Good luck.
