I just bought a henckels Pro S chef's knife and carving knife- do these still hold up as "great chef's knives" in a professional kitchen?

I am a culinary apprentice at JCCC in Kansas. I am a student member of the ACF and work at a hospital in op ks. under a chef that graduated from the same apprenticeship program.
