It has never even crossed my mind not to cook w/ wine/liquor for fear of my child ingesting alcohol... The amount of alcohol that you use when cooking food is so tiny, let alone thats left after some boils/evaporates off is just way...
It freezes beautifully! I freeze it in ice cube trays, that way I can pull out however much I want/need really easily!!   Not sure how long it keeps in a fridge fresh though... I'd guess a few days:)
