I poked around on the original manufacturer sites and BigTray upticks by a couple hundred dollars. However I see where it's a wash IN SOME CASES because you'll pay shipping and handling from the OEM. Other items are way upticked.

I just catered a mexican theme and served enchiladas. I made them neutral giving the customer the option to add spice if they like. Served with that was spanish rice, refried beans and all the sides like guacamole, sour cream, etc. ...

I found a meat pudding recipe on the net. Just use search words "meat pudding" and you'll see one particular hit "old fashion meat pudding"
People love wood. Take a walk through a wooded area and find interesting pieces that fell from trees or thin branches you can pull and shape around the buffet table. Just create an out-doorsy type look.
