There are so many ways you can make dessert sushi. The main thing is to make it look like sushi, but using sweet ingredients. Be creative and have fun!

Perhaps if you had told them your concerns, they might have given you some more challenging tasks. I agree with blueicus, 2 weeks would have been better.
Why not just sub in walnuts for the hazelnuts?

We can give you lots of advice on basics, but we need to know specifically what you're baking. The techniques vary greatly from cookies, to cakes, to breads to desserts, etc.
