I'm not sure how you would fix it, but maybe your mother-in-law could visit or even talk to you on the phone to help you fix it. Or, if she's not availible, try talking to someone else who knows how. And, try tasting the rice before...
When I make custard I 'whip' it with a wisk the whole time instead of just stirring. But be warned, it's tiring. Also, I put it in a dish of cool water and maine never curtles. good luck.
