People have different preferences for thickeners.  For fruit pies, I prefer tapioca (either tapioca starch or instant tapioca ground to a powder).  Conversion would be 2 tsp tapioca to 1 Tbsp flour - so 8 tsp tapioca instead...
What did you use as a thickener for the filling and how much did you use?
Patricia Wells has several other French cookbooks besides Bistro (although that one is a favorite of mine).  The others are worth acquiring as well.
Pancit, chicken or pork adobo, lumpia, bibingka, lots of good Filipino food.  An educational activity waiting to happen!  You might want to pass on the balut and the durian though.
In Hawaii, it isn't unusual to see people selling smaller 5-8 pound Skipjack tuna (aku) out of their cars by the roadside.  Great stuff.  You should try Marlin as well if it is available to you.
In Hawaii, Ahi Tombo is pink in color and looks like what you have pictured.  It is Albacore tuna.  It is less expensive than Ahi which is either Big Eye or Yellow Fin tuna, both of which are red in color.  Still good...
It can also be young tuna which is lighter in color.
