I am with chefross, I too have made hundreds with little problems. I find that blanching the potatoes in warm water works the best for me.
I have done several pigs.. It's a whole lot of work and a whole lot of gratification from customers, in my opinion there is nothing tastier or juicier. I generally stuff it with onions. carrot, celery, as well as oranges and apples.....
