That is what I would do. I keep the chef's choice sharpener for knives I allow my friends and relatives to use -- not my good knives.
If the $700 price tag scares you, you could go to a used restaurant supply store. I have seen good used Robot Coupe food processors [complete] for as low as $150.
OMG! :eek: You mean I am outdated too! I use my vintage Sabatier carbon steel knives. And yes, I will continue to love them, like Pete, outdated or not. :rolleyes:
