Hey all, In the second latest issue of gourmet traveller (party food edition) I noticed a dish that had beetroot poached in bees wax. I have done an extensive amount of research into it, but turned up nothing! If anyone has any information on this, or have even given it a go, please let me know what the meaning behind it is! Thank you
Wouldn't narrow it down to simply boiling.If you look on google, there are actually DIY set ups, which wont cost a small fortune, We use onein my Restaurant, and the results are suberb.
Would it have have anything to do with once the the item has been sealed in the air tight bag, It deprives bacteria of oxegen that it needs to survive?
