If i were you i would save your self the hassle and buy japanese knives. German knives are great and can take some abuse but Japanese are lighter sharper and hold and edge longer. theres lots to choose from your best bet is to miss...
Iv always worn checks since going to school. The place i worked at before school was less formal and we could wear shorts jeans. The only uniform requirment was a black shirt. Very infomal dress code for the nice food we put out.
if you have to hold it i would do it in batches. Maybe 1 pan and hour or 2 pans an hour whatever the case maybe. you would just have to switch it out so it doesnt get real musshy or anything.
A hose/hookup for a hose so when cleaning the hood all you have to do is hit them with degreaser and hose them off.
I wish every chef had the same attitude like you, i wish i got 5-10 hours of overtime a week. Right now im working around 40 hours a week 5 days, come in 2 or 230 and leave 1030-11ish
