| Ok, here is a good one, what is the most creative family meal you have ever served your staff? For me it would have to be pasta with fried chicken livers and red onions with a cream sauce. Shockingly it was actually pretty good, everyone was either really hungry or they really liked it because it was all gone. |

| Oh boy, I have a few that would turn your stomach, lets see how about these: -Tripe served three ways, boiled, steamed, grilled (this was not well received). -Grilled vegetable casserole (this was a winner) Took way to long too make. -Pasta, with anything leftover in the walkin, and I mean anything. |

| I had just graduated from the CIA and took a job at Printers Row restaurant working with Alan Sternweiler, and Mike Foley. My first day the chef asked me to make family meal, and being green I was a little nervous about what to make. Wanting to impress everyone I cooked up some pasta, took some duck, peas and fresh reggiano parmesan cheese and made a good old alfredo sauce with crisp duck and peas. Everyone really loved it, but the chef pulled my to the side and explained the overall concept of family meal. Needless to say he was pretty unhappy that I had made a family meal that cost more than several of the entrees on the menu. What you want? | Ha ha, this is an even funnier topic then the burned out topic. My most famous family meal was my head cheese casserole. ![]() One time I had some left over head cheese, and I was not about to through such a time consuming product in the trash. I cut it up into thin slices, layered it in a pan with tomato sauce, and cover it it bread crumbs, butter, and fresh parsely. I baked the sucker till the top was nice and golden brown, and served it to the staff. I know you won't believe me, but everyone loved it. I never told them what it was, but I never tried to get away with it again. |
