Post Who has the best soft shell crab recipe?

I,m looking to make a very special salad using soft shell crabs for some V.i.p.'s

I don't know if this is appropriate for a salad, but here goes:
Remove gills and apron of the soft shell.
Dredge in seasoned (salt, pepper) flour.
Saute in butter (not oil), until extremities are crisp, remove and set aside.
Saute about 3 oz of GOOD bacon until done to your liking.
Return the crab to the pan to marry with the smoke flavor of the bacon.
Top the crab with some garlic & lemon juice laced bread crumbs and garnish with the bacon.

A recipe I serve in my restaruant, that people rave about is tempura battered soft shell crab with a mango and spring onion risotto. I marinate the crab in a blend of soy sauce and unbrewed tea leaves and place it in the tempura batter and fry. The risotto is made by sauteing garlic, shallots, and diced mango in a little sesame oil, then adding some blanched risotto. Add chicken stock to cover, and a small amount of soy sauce. Cook until tender and stir in some butter and heavy cream at the last minute to get thick and creamy. Its a great dish...

how about macadamia nut crusted with arugula,mango,roasted garlic,and avacado in like a sherry vinaigrette. I wanted to do it this week but, softies are still a little to high
