| chef owned: creative freedom, frequent menu changes, lower food costs, able to change pricing to reflect market value, adaptation to market availibility, marketability of personality corporate owned: lower labor costs, bulk purchasing power, consistency of product even if high turnover of staff, expansion of business |

| Hey oh I've not done, nor been either. But I do want to be an owner. I think the benefit comes down to mirrors. As owner, the only person to whom you are responsable is the person looking back at you. Success or failure, both depend on that one person.
