| passed hors d'oeuvres Im looking for some new app ideas for cartered partys. I'd like some that can be frozen ahead of time .I have now shrimp mousse in puff pasty ect... |

| Springrolls can be frozen then fried. For hors d'oevres make 'em smaller. I've seen people make small crabcakes, bread 'em, then pull out the day of. |

| We do between 2 and 5 cocktail parties a week at the Museum. Here are some our top sellers: Wild Mushroom Duxelle in a phyllo cup with Boursin Cheese Sesame Chicken Tenders Miniature Quiche (seafood, veggie, etc) Cajun Shrimp Shrimp Lejon Shrimp Cocktail Blackened Scallops Peanut-Thai Duck Tenders Sliced duck breast on toasted brioche Chicken liver pate on brioche Sweet 'n sour shrimp Crab claw cocktail Miniature crab cakes Asparagus Forestiers (wrapped in bacon) Figs wrapped with proscuitto Szechuan beef brochette/kabob Grilled vegetable borchettes Fried calamari with lemon aioli Pumpkin fritters Potato pancakes with gorganzola Brie en croute Miniature beef wellington Mushroom caps with smoked turkey sausage Dates wrapped with bacon, stuffed w/a smoked almond Spring rolls (a million different ways) Marinated nocellini mozzarella ('cherry' sized) Hope this helps... |

| bizarre as it seems, i was experimenting with spring rolls and found that chicken skins used instead of spring roll wrappers works just as well, using stuff like a mushroom duxelle with brunois chicken fillet, fried with garlic. strange huh? |

| This is strange....especially since there have been a couple others talking about crispy chicken skin.....now there is a place for the skinless,boneless chicken breast's skin to go. Sounds pretty good Nick! |

| We low-carbers love chicken skin... ![]() Tiropites and spanakotiropites are tops on my list. I've made them in friends' homes for them to freeze and heat for parties, hundreds at a time. Around here they sell for $1 - $1.25 per piece, frozen, in a gourmet store. Let's just say I beat that price! [This message has been edited by Mezzaluna (edited September 22, 2000).] |
