Chef What's the best paellera pan?

Anybody know the best brand for a good paellera? Also, do you as need to 'temper' the pan too? How?

The nice thing about paella pans is that the cheaper ones are better. You can get them is regular carbon steel, stainless steel, enamel, etc, but the carbon steel are the best. I have gottel a couple here http://www.paellapans.com/ and am very happy with them. Give thought to what size you want. Also, the one drawback to the carbon steel ones is you have to dry them immediatly after washing or they will rust. No special curing of the pan is required.
