[quote=cheftobe]Under my apprenticeship program I have to put so many hours in at different stations, I currently have enough hours at one of the stations and my chef refuses to move me to another. He comments that the school will never know what hours are spent at each station and that he will simply sign off that the hours were completed. I feel that this regresses the learning process and I told him this fact. He was upset that I questioned him. I will do whatever is necessary in the kitchen, any task, I will man any station. I also realize that I have to put my time in as an apprentice.I have zero problem doing the work!!!!
cheftobe,
Threads, sometime get derailed. Your first posted responces referred to your situation. I hope that you would take into consideration some of the thoughts.
I have had apprentices that have told me stories of this type for years. Put your AFC codes in check for a while as not to expect all to follow. We are all caught in a transition now. We have progressed in leaps and bounds since the old European concept of "you must pay your dues". Trust me, things are changing!
There are still many pupils of those old mentors and pupils of those pupils, it is very hard to break customs. I was actually told by one of the schools here that if I dropped the apprentice program I might not be considered for a teaching spot when I decided to slow down.
So, for yourself now,and those to follow. Take care of your situation. Don't wait till your in that position of teaching to change it, it slows the process down.
I'm really glad to hear from you again
