| What makes a great chef? Passion. Enthusiasm. Love of good food. Of course a lot of chefs now kind of warp that whole premise. (trout ice cream?) I am not a firm believer in the 'lets put a lot of really weird ingredients together and call it fine dining' genre. But that also doesn't mean that a great chef can't find little tweeks in standard fare and make it something special. IMHO It's that love of the imaginative side of food that makes a good chef great.
