Default Bibb, 3 cases and no ideas

So, I have 3 cases of hydro bibb and no idea what to do with it. Its monday so we are going to be slow. Special salad, maybe? Wilted with some salmon? braised with red cabbage candied apples and bacon in some raviolli? Black and Blue salad with leftover tenderloin scraps? Were a steakhouse so any ideas will help.

Lightly roast some whole kernal corn with a few diced red bell peppers. Mix with an equal amount of cooked black beans.

Make a dressing with puree'd sun dried tomato, mayonaise, sour cream, bacon bits, and a little liquid smoke. Dress the beans and corn with it, and serve it layerd with the bibb, maybe with a little red onion. Goes well with beef or BBQ.

Maybe lettuce wraps, as appetizer or entree' can be done like a pf chang thing.
