I know most schools make you do portfolios for school, how many actually update it and keep putting things into it? Also if you do have an updated one do you use in in job interview and does it seem you get offers if you use it.

I mentioned this in another thread. In my opinion, they are very important. The world is full of line cooks. Some very good and some very bad. The very good ones we refer to as lifers. They are valuable and reliable, but they have no aspirations of advancing their career. If you are serious about making something of yourself in this business, you need proof of it. A resume is just words on paper, even if you have Joel Robuchon or Guy Savoy on it. You may have been the lettuce washer there for five years. How am I to know the difference. In a portfolio, you have photos, citations, medals, letters of recommendation showing that you are a player. I personally have been very impressed by some of the portfolios shown to me by prospective new hires. I can say from experience that 9 out of 10 of them turned out to be studs in the kitchen. It simply shows that you care enough about your career and your reputation to take the time to document it.

updated portfolios are important if you do and PR/media relations shtuff......

In catering the photos cut to the chase.

Clients love to see other's stamps of approval......ooooo aaaaa's.
