Default Ice Cream Sandwiches for the holidays

Stuck on combos......the gelatoria has got some cool new gelatos in during the holidays that will make great ice cream mini sandwiches.....
Peppermint will be paired with chocolate wafer
But the gingerbread and eggnog flavors have me stumped.
Both have alot of flavor.....gingerbread is like a very good wine, just keeps going.
Any thoughts?

For the gingerbread gelato, how about something with banana, apple or pumpkin?

For the egg nog, how about butter rum or something apple-cinnamon?

I still think gingerbread for the egg nog gelato and something like graham cracker or that replicates the flavor of an ice cream sugar come for the gingerbread.

It's not necessarily a "traditional" combination -but I think a pumpkin with chai gelato with a muscadavo sugar cookie sounds **** festive .....oooh with a makers mark caramel sauce! and a hot glass of mulled wine. I'm pretty sure that's what jesus would have for christmas dessert.

Well... yeah!

I'm no baker, but I have eaten them. A google of "banana cookies" brings up plenty of recipe hits.
