Wink Did you attend the C.I.A.?

I am wrighting a report on people that attended the C.I.A. and I would like to ask YOU some questions if you attended. Well, what the hey, Even if you didn't attend, drop me a line. The main questions I have are the basics, did you like the school you went to? Do you think you would be were you are if you hadn't attended the school? Would you recommend your school to others (me)? Things like that. If you have a chance to reply to me I would like it very much, and If you have any friends, co-workers, acquaintances, any one that is or want's to be a chef, give them my address please. Welcome Tiger Eye...don't forget to leave a post in the beginners area

No I did not go to the C.I.A....nor did I exchange drugs for guns to the Contras(he he)

I knew a lot of people who went there. Some great, some not so great. It was fun listening to them talk so fondly of their old school. A couple of them were involved with the Olympics during the gold medal years in the early 80's. Any of those chefs out there?

I read today that Metz is retiring and the school is looking for a replacement. There will be some big shoes to fill!

Hey Tiger Eye,

I have attended a number of times at CIA Greystone. I has actually been like a vacation, I met some great chefs and made friends, especially with late chef Catherine Brandel, who was worth the stints just getting to know her. I don't feel it was a major factor in my career except it helped me get certified with the ACF, and it looks fantastic on a resume'. I believe you can learn as much if not more for much less money and some tenacity on your part, but perhaps not in as short of a time period. I was fortunate in the the HYATT picked up my tab, one of the things I miss in not working for that company anymore.

palmier, you really made me stop and think...I do that sometimes
heres some names from the past. 1984 team was
Metz Team Captian
Richard Schneider
Marcus Bosinger
Daniel Hugelier
Tim Ryan (competed against him) Lost
Siegfried Eisenberger
mark Erickson (competed against him)Lost
Jeffrey Gabriel
Victor Gielisse
Hartmut Handke
Gunther Heiland
raimund Hofmeister
Lars Johansson (my pastry instructor at J&W)
Helmut Loibl
and Roland Schaffer.
Then in 88 the USA won the world Championship
Metz was still captain and Ryan,erickson,handke,Hugelier,Eisenberger where still on the team. Northmore,Claycomb,gabriel,kellaway,Radin,Russell, Catherall,Foster,and Speckcamp where all new to the 88 team, But they kicked some butt and won the championship.
I have taken some classes at the CIA in Napa Valley and Erickson is running the west coast school...Had a blast.

Cape that is wild that you competed against Tim Ryan and Mark Erickson, I remember those guys when I went to the CIA. Great guys, very knowledgable, but they weren't teaching! It was the biggest joke, they were pusing pencils in an office on the third floor. I wish guys like Metz, Erickson, and Ryan were teaching instead of working in an office.

I used to be on a team with Ed Leonard...He's now on the national team.
We had a CT chapter of the ACF back in 85/86 is when the preliminary competitions we're being held nation wide.Our team competed against the in Boston. Fritz sommersmit was one of the judges so was metz and I forget the women's name she was an instructor at the culinary (incredible bread dough work)Any way we got a high silver and missed a gold by one point Ryan and Eriksson received perfect scores and there work was really incredible.If we got a gold we could of moved on to Chicago for the hot food compitition.Needless to say they went on to win the whole shooting match in Germany which was very cool.
