Default ideas/input anyone?

I am currently attending Johnson and Wales in Charlotte, NC, already having a Bachelor's in Food Systems Management from Appalachian State, but I want to eventually go to France to study more about the classical French techniques, their culture and history. I know enough French to get around, but I still strive to become fluent.
My plans after graduation are to become employed in Quebec, Canada, for about 2-3 years, and then head to France, possibly doing another apprenticeship program or employ myself in one of the country's top restaurants for about 2-4 years. I love to travel, and know that France is one of the best places in the world to go for culinary instruction.
Does anyone know any great schools, or other opportunities in France or Quebec? If there are any chefs out there, I'd definitely appreciate your input.
