An easy one is fresh lime juice, cilantro, chopped jalapneos, and a light touch of cumin.

Try looking into using dried chilli peppers ground. Each has a distict flavor and is very southwest. They are great for "rubs"
I use three to four ground peppers for my chilli brioche, some are super spicy and others just have the most wonderful smokey accents.
