To be a good line cook you need:
- to work clean
- stay organised
- think quick on your feet
- and most importantly, keep a cool head

oh yea, i left a few parts out... besides the speed, skill, and sanitation, you have to be a workaholic.... you have to have a hard on for a sexy looking plate. you know your a good cook when you put a perfectly garnmished, sauced and gleeming plate of anything in the window and have to run to the john to wipe your pants out. When you lose your mind, because instead of saying your prayers at night, you resite your next days preplist, and wake up saying the same item you left off on...... when you can make a mango chutney in your sleep...... then you are a good cook.

You all know its true.....
