What is the best marinade? That's kind of a subjective thing. It all depends on what you like. With skirt steak, peppers & onions I assume you are doing the fajita type thing. If that is the case then a marinade of lime juice, oil, salt, chipotle pepper, cumin, ground coriander, and cilantro would be great. Or skip the peppers, caramelize the onions to top the steak that has been marinated in bourbon, honey, orange zest, dijon mustard, just a touch of cinnamon and a little cayenne, and then quickly grilled. Those are just two marinades you could make.

If you are going to cook in a few hours:
1/4 beef stock
1/4 soy
1/4 worchestershire
1/4 red wine

If you are doing long lead prep that has to sit a lcouple of days:

Olive oil and RL Schrieber steak seasoning mixed in a light slurry.

That sounds good! Would that marinade work for fajitas?

It's really not a fajita marinade. Not sure how all the ingredients would go with peppers, cilantro, etc. (the stuff of fajitas). The first marinade would be better for fajitas, while the second was more as a way to service the skirt steaks more as "steaks".
