chefmonkey, what is your goal? Is it to please their palate or are there dietary restrictions to continue? I find elderly folks love "old dishes." Chicken and dumplings; meatloaf and gravy, a good potroast (pork pot roast is a big, because no one does them any more); baked ham with scalloped potatoes, homemeade pies and cobbler. Foods that you can only cook in a large amount are missed, because they only have one or two to feed at a time.

Also if you are cooking for a larger group of people then I would recommend the book "Cooking for 50 over 50" It is geered for 50 people who are over 50. So the sodium restrictions are enforced throughout, there are explanations of various diets and texture modifications necessary for older folks in there. I used to be a dietary director at an upscale nursing home, still were able to serve beef wellington and such, just gotta know the various diets and texture modifications necessary, i.e. ground meats and purees, no concentrated sweets (diabetics), no salty foods, low fat/low cholest., etc.
