Question Mushroom Allergies

This Thanksgiving I will be having a guest who is allergic to mushrooms. I would like to prepare the green bean casserole with a substitute for the cream of mushroom soup. Any suggestions?

cream of celery......or how about fresh green beans with butter, lemon and almonds....not as rich and gooey but a nice addition to in all probability rich meal.

if your feeling adventorous, make a chicken veloute with a roasted garlic reduction.

And please be sympathetic to the poor diner. I wouldn't consider it an allergy. I'd consider it a curse. Mon dieu!

Andrew's idea sounds yummy but you can also do a cream-of-anything soup. Carrots, broccoli, potato, etc.

How about a warm vichyssoise.....potato & leek soup?

Default shroomgirl has it going on

i just did this two nights ago. SOOOOOO much better than green bean casserole. get some nice filet beans and steam them a bit. quicker than casserole too.
