Default Gourmet Foods Store

I am in the process of creating a web-based gourmet foods business based in New York City. I only want to sell the very finest products figuring that the web is big enough to provide a customer base that is sufficiently discriminating to appreciate quality.

Does anyone have any thoughts on which wholesalers I should go to for the best cheeses and other gourmet items in New York?

Opinions vary, so I figured you guys would be the best ones to ask.
