Default Culinary student taking semester off, need advice. thanks

Im going to take a semester off from culinary school to finish some general ed classes. I have access to my brother in-laws restaurants kitchen on sundays. I was just wondering what I could do to catch up on sundays. Maybe some cooking excercises, or making three course meals. Maybe even composing my own dishes using the flavor charts in the book culinary artistry. Any advice would help. thanks

You might want to take a job somewhere on the Sunday. Its best to learn on the job.
