I think that you have the right attitude and should look to get where you can learn more. It is nice to hear someone who realises that there is still stuff to learn and they want to learn.
I have had many of my cooks go onto school, move up the ladder and I encouraged them to move there carrers. Why, because they were motivated, respectfull, concinceous and I knew that they were the type of person that I would be proud to call a chef and equal.
I get so frustrated with these kids that come out of school, know it all and feel that they should get top dollar when they cannot even make a 30 egg hollandaise, it's a joke. Big friggin deal you got a peice of paper, what can you DO!!!!
