| After a 2 year hiatus in a professional kitchen i am going back to what i feel is my passion, but im a little nervous. Any good tips on re-entering a high end kitchen after being out of one for about 2 years. Any good websites that can help me refresh my basics? thanks |

| Find out what station you're on, and get a photocopy of the menu. Break that menu down into ingredients, and break the ingredients down into raw ingredients. Do this for each station. On your first day you should be able to recognize what each cook is doing, and while you might not move like a ballerena on your first day, you'll fit right in. Moves will come in a few days. |
