Default Adventurous Chef de Cuisine

I am looking for a chef to start out as chef de cuisine then, hopefully, move into the head chef position of the group.

These are the stats for the job:

Lg. Restaurant: 250-300 seats (depending onthe time of year)

Cuisine: Third floor italian. (Fresh Pastas, etc. the freshest ingredients
available, medium price range)

Second Fl: French-Asian, some sushi/sashimi, interesting, fun
hopefully, great presentations.

Summer Outdoor Seating: Mix of both, all menus are available all
the time.

This restaurant is the most successful independent restaurant in the market, large staff-50 cooks on the schedule when fully staffed(that is tough to handle sometimes), Kitchen is not the newest but is OK and with the right person and the right ideas changing that situation is 100% possible.

Requirements for the job: --Minimum 3 years Chef de Cuisine/Head
Chef in a busy environment.

--Energetic, diplomatic with the staff
and a good teacher.

--Ability to work with another Chef in menu and
concept development. Will create dishes
initially with Exec. (there is more than one
restaurant) translate these to production
and teach cooks/maintain quality

--Adventurous, reliable, serious but with a
sense of humor, gets-the-job-done-no
-matter-what-is-happening.

--quality conscious, at all times.

Salary: High, depending on success of course. Salary and % of sales

Other desirable qualities: --Some knowledge of Russian would be
really great. This IS NOT 100% necessary
but it would really help you out. Fluency
is by no means required.
--the ability to teach is necessary but the
ability for you to be flexible and to learn
also will get the job done.

ALSO: I would consider a team.
Chef de Cuisine and SousChef
Serious only.

What I need to consider you: Checkable References, good Track Record
Photos of your work (to get an idea of
Style experience), Management Track
Record. Super Responsible but a bit
fearless. CV. Passport and ablility to travel
without problems. No criminal record.

So, that is the job. It is a great position for the right person. I did it for almost 3 years and am now the Exec of the group. I left the position in June of 2005 but recently was asked to come back and fix some real quality problems that happened while I was gone. It is interesting work for an interesting person. I would not mislead anyone. The only thing you need to do this job is experience, hard work and the ability to have fun in a trying situation sometimes.

Also: I am interested in a Style/Service Director, if you know someone that fits the bill. This position must have good FOH experience, a good command of Russian, charm and a bit of style.
