| Samir If you haven't started entry level and worked in a restaurant before, don't even think about the chef part, until you get the dishwasher and cold prep positions nailed down. Foodservice is not for everybody so make sure you have the right personality and passion. It's funny how, when you first start working in a restaurant (first job) as a dishwasher, it's the most miserable job there. 24 years later, I see clearly that dishwashing is one of the greatest jobs in the kitchen (in terms of ease to master). Not only does the entire operation revolve around the dish pit being functional, but it is the one station that touches every single customer dining in your restaurant. Go start washing dishes somewhere, and then we'll talk. (Envisioning Borat working in Rocco's BOH) Cat Man |

| Samir, don't beleive what you see on television,ok? "Celebrity chefs" have already paid their dues and worked their way through the industry for years to get to where they are. It's not all glamor and prestige. While Food Network has opened up our profession to make it more accessible to the general public,it also has hurt our industry by making it look so easy and leaving out the tedious aspects of day-to-day operations that the general public would be bored watching.....

| Watch the bakers/prep cooks work when you have free time, learn from them. If the restaurant is slow, offer them a hand. As long as the dish station does not suffer, I wouldn't see why you cant help out a little bit with basic prep. I am currently working with our dishwasher who has taken an interest in cooking. We have gone over simple things like blanching vegetables and basic knife handling. I would like to see him on the line one day. |
