Default Pub Kitchen in UK

Hi guys - I don't know if there are any pub chefs/publicans on this forum. I am about to take over a pub - My son is going to do the bar side of the things and I am going to run the kitchen. Although I have my own cafe and also cater professionally - I have never run a pub kitchen. We have a lot of nice local stuff as it is in Wiltshire - we have pigs, cows, fresh veges, cheese, cream etc all on our door step so the food miles are going to be very low but I am hoping to get some very 'unusual' recipes from you all instead of the same old stuff you get at every pub in England. Please I do not want this to be a 'gastro' pub - just something 'different' using traditional ingredients - thanks

Good luck with your new venture.
Dont know Wiltshire, but i know their dry cure ham & bacon its fabulous & wot i buy for the family. I reckon bacon steaks with some ideas you may get from the forum would be a go-er.
On the same tack - Belly pork is something the Americans do very well. We just seem to stuff it and roast it. Where-as they have all kinds of spicy rubs. they jerk it and do all sortsof scrummy stuff with it.
I would be asking the forum how to make the most of it.
